Healthy Recipe: Winter Greens, Squash, and Peeled Pear Detox Salad

Peeled Pear Detox Salad offers a vibrant mix of flavors that proves a
nutritious meal can also feel indulgent. With the subtle bitterness of
winter greens, the caramelized sweetness of roasted squash, and the
juiciness of ripe pear, all drizzled with a tangy white balsamic
vinaigrette, this low-fat salad is a feast for both your taste buds and your
health.

Winter Greens, Squash and Peeled Pear Detox Salad

Ingredients:
• 1 small head of radicchio, sliced
• 2 handfuls of arugula
• 2-3 heads of endive, sliced
• ½ squash, sliced into ¼ inch spears
• ½ a pear
• sea salt, freshly ground pepper
• 1 shallot, sliced
• ¼ cup of white balsamic vinegar
• ½ cup of olive oil

Directions:

  1. Pre-heat oven 400°F.
  2. Place squash slices in on baking sheet.
  3. Drizzle with olive oil, sea salt, pepper.
  4. Bake until golden both sides.
  5. Remove, let cool to room temperature.
  6. Place lettuces in a large serving bowl.
  7. Peel pear into thin slices, add to lettuce.
  8. Add cooked squash. Toss and serve.
  9. For salad dressing: combine the shallot, 1/4 cup white balsamic vinegar, and
    1/2 cup olive oil.
