Winter Greens, Squash and Peeled Pear Detox Salad
Ingredients:
• 1 small head of radicchio, sliced
• 2 handfuls of arugula
• 2-3 heads of endive, sliced
• ½ squash, sliced into ¼ inch spears
• ½ a pear
• sea salt, freshly ground pepper
• 1 shallot, sliced
• ¼ cup of white balsamic vinegar
• ½ cup of olive oil
Directions:
- Pre-heat oven 400°F.
- Place squash slices in on baking sheet.
- Drizzle with olive oil, sea salt, pepper.
- Bake until golden both sides.
- Remove, let cool to room temperature.
- Place lettuces in a large serving bowl.
- Peel pear into thin slices, add to lettuce.
- Add cooked squash. Toss and serve.

1/2 cup olive oil.
