They use basic ingredients you may already have at home, come together without turning on the oven and get a little extra texture from oats, chocolate chips and toasted coconut. They are also diabetes-friendly, so they make a handy snack to keep in the fridge for the week.
No-Bake Chocolate Almond Treats — makes 24 servings
Ingredients:
• 2 tablespoons of sugar
• 1/4 cup of almond milk
• 3/4 cup of almond butter
• 1/2 teaspoon of vanilla extract
• 1 scoop of stevia powder
• 1/8 teaspoon of of sea salt
• 3 tablespoons of chocolate protein powder
• 1 1/4 cups of rolled oats
• 3 tablespoons of mini chocolate chips
• 1/3 cup of shredded toasted coconut
Directions:
- In a small saucepan, combine sugar and almond milk over medium heat, stirring occasionally. When mixture comes to a boil, remove from heat.
- Cool 5 minutes, then stir in almond butter, vanilla extract, stevia powder, and salt.
- Transfer to large bowl. Add protein powder, oats, and mini chocolate chips and mix thoroughly with wooden spoon, using hands if mixture becomes too thick for a spoon.
- Using a tablespoon measure to form heaping tablespoons of the mixture, form 24 balls. Scatter coconut on plate and roll each ball through the coconut to lightly coat. Place balls on baking sheet lined with waxed paper.
- Refrigerate until firm, at least 2 hours.
