Easy Pea-sy Soup — makes 4 servings
Ingredients:
• 2 tablespoons of oil oil
• 4 teaspoons of plain non-fat yogurt
• A handful of fresh mint, chopped
• 1 large onion, sliced
• 4 cups of frozen peas
• 2 1/2 cups of water
• 1 cup of vegetable broth
Directions:
- Heat oil in a large pan on moderate heat. Add sliced onion. Stir occasionally and cook until onion has softened. Add frozen peas and continue to stir.
- Add water and vegetable stock to pan. Simmer, covered, until peas are tender, about 5 to 10 minutes.
- Tip the soup into a blender and puree until smooth.
- When you're ready to serve, ladle soup into bowls and season with salt and pepper. Garnish with mint and a drizzle of yogurt.
