Healthy Recipe: Chicken Cacciatore

Warm up your kitchen with the aroma of Chicken Cacciatore, a dish that
proves comfort food can be both indulgently delicious and healthy. This
heart-healthy recipe is made with tender chicken simmered in a rich medley
of tomatoes, olives, and fragrant herbs, served over fluffy whole-wheat
couscous.

Chicken cacciatore — makes 4 servings

Ingredients:
• 1 teaspoon of olive oil
• 1 medium onion, finely chopped
• 2 garlic, sliced
• 1 tablespoon of fresh oregano
• 2 springs of rosemary
• 4 boneless, skinless chicken breasts (about 4 oz. each)
• 1 (15-oz.) can of no-salt-added diced tomatoes
• 4 pitted olives, chopped
• 1 cup of mushrooms, chopped
• 1 cup of low-sodium chicken broth
• 2 cups of whole wheat uncooked couscous
• A handful of parsley, chopped

Directions:

  1. Heat olive oil in a nonstick pan on medium heat. Add onion, garlic, and
    herbs. Sautée until softened.
  2. Add chicken on top. Cook for 5 minutes, or until browned. Turn once. Add
    diced tomatoes, olives, mushrooms, and stock. Cover, reduce, and simmer for
    10 to 15 minutes, or until chicken is cooked.
  3. Meanwhile, cook couscous according to packet.
  4. To serve, divide couscous on four plates and spoon chicken mixture on top.
    Garnish with parsley.
